Simply Divine Cookies

 

My mother-in-law made these cookies for me when I was pregnant with my third baby. I remember just devouring them!

They were exactly what I was craving - a little sweet, a little salty, a little chewy and a little crunchy. So good!! We named them “Simply Divine Chocolate Chip PB Oatmeal Cookies” but since that’s a long name, we’ll just go with “Simply Divine Cookies"

I made these cookies for the first Stroller Strength weekend retreat and they were a hit!

I made these cookies for a camping trip we went on when we first moved to Seattle - we went with four other families and everyone loved them!

I make these cookies for our family trips to Lake Chelan each summer and even a double batch is gone in a few days!

They are a crowd pleaser!

 

We just sent our oldest daughter off to college a couple weeks ago. When I was putting together the first care package to send her, I was debating what little treat to include. I could have made blueberry muffins or banana bread, but I thought those might get squished in transit.

Then I remembered these cookies!

The recipe is simple and it uses ingredients that we usually have on hand. And they don’t take long to bake. So, I whipped up a batch and packed up a gallon ziplock bag.

Since Eugene, OR is only 6 hours away, regular ground shipping is so quick!! She got the cookies the next day! And guess what? She and her friends loved them!

Here’s what I love about these cookies:

  • If you haven’t gathered by now, I like SIMPLE!! If something is too fancy or complicated, I’m out. These are so easy to make!

  • They contain ingredients that actually have some nutritional value, like oatmeal, peanut butter and eggs. So while they do have brown sugar and chocolate chips, you’re balancing out some of the sweet with fiber and nutrients.

  • They are gluten-free and dairy-free, plus you can easily swap out the peanut butter for almond butter or sunflower seed butter in case of any allergies.

  • The use of dark chocolate chips instead of milk chocolate reduces sugar content and adds antioxidants.

  • They’re easy to freeze. I’ll often make a double batch which is a LOT of cookies and I’ll freeze half so that the next crowd-pleasing opportunity that comes along, I am prepared.

2. her favorite snacks from Trader Joes (Everything but the bagel nuts + sesame crackers)

3. Canasta + Cards - because how fun would it be to get a dorm tournament going?

4. her swim gear bag + gear - because guess who joined the club swim team?!?

5. her silk pillow case

6. a few items of clothing she accidentally left in the dryer

7. a little note telling her how proud we are of her and how much we miss her

Chloe said, “mom, you’d better do this for me when I go to college!” So even though we are entering “bird-launcher” season of parenting, I think these cookies will continue to serve us well for many more years to come.
