Healthy Fried Rice

 

healthy Fried Rice

This meal has been a staple for our family’s quick weeknight dinners for years. I love how simple, balanced and flavorful it is! I call this a “kitchen sink meal” because I often make this meal because we have leftover rice and veggies to use up!


Ingredients

  • 3 cups rice cooked - brown or jasmine work great

  • 1-2 cups carrots, diced

  • 1-2 cups peas

  • 1-2 cups bok choy, chopped

  • 2-4 eggs (can sub egg whites)

  • 3-4 TB low sodium soy sauce or liquid aminos

  • 2-3 green onions - chopped

  • 2-4 TB multicolored sesame seeds

  • olive oil

  • salmon fillets (optional)

Instructions

  • if adding salmon, follow these instructions and cook salmon while you are cooking the rice mixture

  • pour a lug of olive oil on a large sauté pan and add chopped veggies (except green onions) - cook until tender

  • add rice and stir to mix

  • create a hole in the center of the mixture and crack your eggs

  • cook until eggs reach a soft scrambled texture, and the stir to mix with the rice and veggies

  • Add soy sauce or liquid aminos and stir to fully combine

  • Add optional salmon on top for extra protein boost

  • Sprinkle with green onions and sesame seeds
