Almond Flour Banana Cookies

 

ALmond flour banana cookies

These are the best little chewy bites that are satisfying and well balanced too. These can be a sweet treat or a compliment to breakfast since they have protein, fat and carbs!


Ingredients

  • 2.5 cups almond flour

  • ¾ cup mashed banana (about 2 large bananas)

  • 2 scoops Arbonne vanilla protein powder

  • 2 TB coconut oil, melted

  • 1 tsp vanilla

  • 1 TB maple syrup (optional)

Instructions

  • Preheat oven 350 degrees

  • Line baking sheet with parchment paper

  • Peel and mash bananas until it forms a smooth puree with small lumps of banana

  • Stir in almond flour until you get a smooth but firm consistency 

  • Add in optional ingredients and stir to mix

  • Spoon about a tablespoon of dough and roll into a ball

  • Place on cookie sheet and flatten with the back of a fork

  • Bake approx 15 minutes until golden brown

  • Enjoy- cookies are meant to be soft and chewy
