Savory Egg Muffins

Easy protein-forward recipe that will make your mornings so much easier. These can be a snack or breakfast.

2 Egg Muffins = ~220 calories, 20g protein, 14g fat, 2g carbs

Try paired with fruit, oatmeal, or a healthy muffin to add some carbohydrates and fiber.


Ingredients

  • 12 eggs

  • olive oil or cooking spray

  • veggies - peppers, spinach, onions, arugula, kale, mushrooms, etc

  • toppings - chopped ham or sausage, feta cheese, salsa

  • Pinch of garlic salt + salt + pepper to taste

Instructions

  1. Preheat oven to 300 degrees

  2. Drizzle or spray olive oil into each muffin tin hole

  3. Crack an egg into each hole (keep the yolk hole or scramble each egg)

  4. Add veggies

  5. Add toppings

  6. Bake for 25-30 min

  7. Enjoy - same day or save in the fridge for the week ahead
