Pesto Pasta

Simple and satisfying - great fresh or make-ahead for easy lunches or dinners.


Ingredients

  • TJ’s brown rice quinoa pasta (cooked according to package)

  • cooked chicken breasts/thighs (rotisserie chicken or make-ahead chicken)

  • TJ’s vegan kale basil pesto

  • veggie options - sliced tomatoes, chopped bell peppers, arugula, roasted red bell peppers, artichoke hearts, etc

  • toppings - pine nuts, garbanzo beans, parm cheese, greek olives, fresh basil, etc

  • Pinch of garlic salt + salt + pepper to taste

Instructions

  1. Cook pasta according to directions

  2. Drizzle cooked pasta with olive oil

  3. Top with chicken (or protein of choice)

  4. Add veggies

  5. Add toppings

  6. Enjoy - same day or save in the fridge for the week ahead
