Pesto Pasta
Simple and satisfying - great fresh or make-ahead for easy lunches or dinners.
Ingredients
TJ’s brown rice quinoa pasta (cooked according to package)
cooked chicken breasts/thighs (rotisserie chicken or make-ahead chicken)
TJ’s vegan kale basil pesto
veggie options - sliced tomatoes, chopped bell peppers, arugula, roasted red bell peppers, artichoke hearts, etc
toppings - pine nuts, garbanzo beans, parm cheese, greek olives, fresh basil, etc
Pinch of garlic salt + salt + pepper to taste
Instructions
Cook pasta according to directions
Drizzle cooked pasta with olive oil
Top with chicken (or protein of choice)
Add veggies
Add toppings
Enjoy - same day or save in the fridge for the week ahead
