Blended Chia Pudding

Since I struggle with chia seeds getting stuck in my teeth, I found that if I blend the base and then refrigerate, that doesn’t happen.


Ingredients

  • 3 TB chia seeds

  • 1 TB PB2

  • 1/3 cup (or 2 scoops) vanilla protein powder (my favorite is Arbonne)

  • Β½ cup to 1 cup of milk or milk alternative (amount depends on the texture you prefer)

  • fruit (fresh or frozen raspberries, mango, strawberries, etc) (optional)

  • Pinch of salt + dash of cinnamon (optional)

Instructions

Add everything to a blender and blend until smooth. Pour into a jar and refrigerate at least 4 hours (overnight is best). The chia will gel and thicken into a mousse-like pudding. Add fruit, nuts, shredded coconut and/or granola.
