5 Min Meal

Ingredients:

  • 1 package of ground chicken

  • 90 sec Microwave bag of rice / quinoa / etc

  • Kale (about 1 cup)

  • Olive Oil or avocado oil

  • Salsa

  • Optional toppings - Green Goddess dressing or sliced avocados, cilantro, pickled red onions

Steps:

  1. Brown ground chicken in a pan, then when cooked all the way through, add a ½- 1 cup of salsa and stir together

  2. Meanwhile throw in a bag of 90 sec rice / quinoa in the microwave

  3. Massage kale with olive or avocado oil (or you can use a whole avocado)

  4. Throw everything together and top with Green Goddess, pickled onions, etc
