Butternut Squash soup

Ingredients:

  • 1 medium butternut squash, peeled and diced into cubes

  • 1 TB ginger - chopped (adjust according to taste)

  • 2 cups broth (chicken or veg work great) 

  • 1-2 tsp olive oil

  • 1-2 tsp salt

Steps:

  1. Drizzle the the butternut squash with extra virgin olive oil and salt

  2. Roast at 400 degrees for about 30 min or until lightly browned

  3. Pour butternut squash into blender

  4. Add the rest of the ingredients and blend until smooth and creamy

  5. Enjoy.
