salmon cakes

Ingredients:

  • cooked salmon or one pouch (5oz)

  • 1 egg

  • ¼ cup hummus

  • ⅓ cup almond meal / almond flour

  • ½ lemon, juiced

  • 2 green onions

  • salt and pepper

Steps:

  1. Mix everything together, and form into patties

  2. Heat oil in skillet and cook patties until golden brown, about 3-4 min / side

  3. Serve over a bed of arugula with sliced lemon
