LET’S EAT!

Protein Pancakes

Ingredients:

  • 1/2 cup oats

  • 4 egg whites (or 3 whites + 1 yolk) (or 1 scoop Arbonne protein and 3 egg whites)

  • cinnamon, pumpkin pie spices

  • splash of milk alternative (oat, almond, cashew)

  • Optional: berries, bananas, natural applesauce, canned pumpkin, etc

  • Toppings: blueberries, almond butter, peanut butter

Steps:

  1. Blend all ingredients together (except blueberries), add a splash of water/milk alternative. 

  2. Heat a skillet over medium high heat with 1-2 TB coconut oil

  3. Pour batter into hot pan, and add blueberries

  4. Wait until tiny bubbles form on top of the pancake, then flip. 

  5. You may need to reduce the heat and finish cooking other side. 

    **Please note this technique takes practice to get it right - if you end up with a gooey mess, try again!
