Greek Salad Bar

Ingredients:

  • Lettuce / greens

  • 1/2 cup kalamata olives

  • 1 pint of cherry tomatoes, sliced

  • 1-2 medium avocados

  • 1-2 medium cucumbers, sliced

  • pickled red onions

  • feta cheese

  • optional - chicken cubed, chick peas

  • 1/4 cup olive oil

  • juice of 2 lemons

  • 2 TB red wine vinegar

  • 1 tsp dijon mustard

Steps:

  1. Chop all veggies

  2. Combine the last 4 ingredients into a mason jar and shake vigorously.

  3. Assemble salads.
