Loaded Sweet potato

Ingredients:

  • Medium sweet potato

  • Garlicky chickpeas

  • Sprouts / Microgreens or other veggies

  • Protein (tuna, chicken, eggs or vegan - artichoke hearts / olives)

  • TJ’s vegan pesto, green goddess, or hummus for topping


Steps:

  1. Cook sweet potato - (5-6 min in microwave)

  2. Slice open sweet potato.

  3. Fill with chickpeas, greens, protein and top with vegan pesto or green goddess.
