Loaded Sweet potato
Ingredients:
Medium sweet potato
Garlicky chickpeas
Sprouts / Microgreens or other veggies
Protein (tuna, chicken, eggs or vegan - artichoke hearts / olives)
TJβs vegan pesto, green goddess, or hummus for topping
Steps:
Cook sweet potato - (5-6 min in microwave)
Slice open sweet potato.
Fill with chickpeas, greens, protein and top with vegan pesto or green goddess.
